What many people don’t know is that avocados come with more potassium compared to bananas.
Namely, a small amount of avocado comes with 14% of the daily recommended intake of this mineral and bananas have about %10.
Now here’s what you’ll need to prepare this tasty cake:
- Two teaspoons of baking powder
- One avocado (mash to get a smooth texture)
- ¼ cup of olive oil
- ½ teaspoon of kosher salt
- Two teaspoons of baking soda
- Three cups of flour (coconut or rice flour are the best choices)
- Five tablespoons of dark chocolate cocoa powder
- Two cups of water
- Two teaspoons of vanilla extract
- Two cups of organic sucanat sugar
- Two tablespoons of white vinegar.
Here’s what you’ll need for the frosting:
- Five tablespoons of dark chocolate cocoa powder
- Two avocados (mashed)
- One cup of sugar.
Instructions:
- Start by preheating your oven to about 350. Take two round cake pans (9 inches each) and flour and grease them.
- After that, whisk the cocoa powder, flour, kosher salt, baking soda, and baking powder in a bowl. Take another large bowl and whisk the white vinegar, olive oil, water, avocado, and vanilla extract. Once they get even texture, put the organic sucanat sugar.
- Place this mixture right into the flour mixture. After that, stir these mixtures well. Once you are finished, separate the mixture in the cake pans and start baking the mixture. After 30 minutes, the cake should be prepared.
- Remove the pans from the heat and let them cool. Take the cakes out of the pans after about 15 minutes. This is when you should put the frosting layer on the primary layer of the cake and next to the other one.
Finally, add the frosting that’s left on the top of the cake.
