Zuccini Fritter with Avocado Dill Dip Recipe

Not only it is easy to prepare, but this is a perfect dish for a picnic.

For this recipe, you need the following ingredients:

  • 1 large or 2 small zucchini
  • 1 clove peeled and minced garlic
  • ¼ cup fresh basil
  • ¼ fresh oregano
  • 1 tbsp. lemon zest
  • 2 eggs or flax eggs
  • ¼ cup gluten free flour
  • ¼ tsp onion powder
  • 1 tsp salt
  • ¼ tsp pepper

Method of preparation:

First grate the zucchini on the large holes on the box grater. Put the zucchini in a colander and add half of the salt. Leave it for ten minutes and ten wrap the zucchini in a towel to remove the moisture. Then put the zucchini in some large bowl and then add the oregano, basil, garlic, eggs, onion powder, lemon zest, pepper and the rest of the salt. Mix the combination well. In the end, slowly add the flour, stirring in order not to make any lumps.

In some large pan, add 2 tbsp. of olive or coconut oil and heat the pan on a medium-high temperature. When it starts sizzling, drop some tablespoons of the zucchini mixture into the pan, making sure they are a few inches apart.

Cook the fritters for 2-3 minutes until they turn golden. Then lower the heat, then turn them on the opposite side. When ready, put them on a plate making sure they are in a warm place. If you need add some more oil in order to cook the rest of the zucchini fritters.

Additional Ingredients:

Avocado Dip Base

  • ½ cup finely chopped dill

If you prefer more veggies, you can add chopped spinach or kale.
