Chocolate Avocado Cookies Recipe

Ingredients:
  • 1/2 cup mashed avocado
  • 1/2 cup of turbinado sugar
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon cider vinegar
  • 1/2 teaspoon of baking powder
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon cinnamon
  • 3/4 cup of gluten free flour
  • 100g bag dark chocolate chips
Directions:
  • Preheat oven to 350 degrees.
  • Mix together mashed avocado and sugar. Add vanilla extract, cider vinegar, baking powder and cocoa powder. Add flour and mix till smooth. Incorporate chocolate chips by folding through mixture.
  • Place tablespoons of the mixture onto a baking sheet lined with parchment paper and flatten slightly.
  • Bake for 15 minutes. Turn the baking sheet around. Bake for another 5 minutes.
  • Take out of the oven and wait for 3-4 minutes before putting on a rack to cool completely.
  • Makes about 12 cookies.
