Instead of refined sugars, you should use dates as well as brown rice and coconut flour instead of wheat flour. If you don’t have brown rice flour on hand, feel free to use spelt flour.
Banana and Coconut Bread Recipe
You need the following ingredients:
- 125 ml or ½ cup of melted coconut oil
- 1 tablespoon of vanilla paste or vanilla extract
- 4 beaten eggs
- 3 ripe and mashed bananas
- 8 pitted and chopped Medjool dates
- 1 tablespoon of baking soda
- 65 grams or 1 cup of shredded coconut
- 135 grams or 1 cup of brown rice flour
Instructions:
First of all, preheat the oven to 350°F (180°C). Then line a baking paper to a 10 x 22 cm loaf tin. Take some medium-sized bowl and add the melted coconut oil, bananas, vanilla, eggs, baking soda, and dates. Mix this combination well and then add the brown rice flour and shredded coconut flour. Fold it well until you get a well-combined mixture. Place this mixture in the loaf and bake for 45-60 minutes. You can check whether it is baked with an insertion of a skewer.
