How to Make Whole Roasted Cauliflower

If you’re a vegetarian or vegan, it doesn’t mean that you can’t have a roast at the centerpiece of your Christmas table. We’ll show you how to prepare a spiced, zesty roasted cauliflower that will fill your house with pleasant smell and amaze your guests with its flavors.

Whole Roasted Cauliflower Recipe

Ingredients

  • 1 large cauliflower, (2.2 lbs or 1kg) with outer leaves left on
  • 1 teaspoon of smoked paprika
  • 3 cloves of garlic
  • 2 tablespoons of olive oil
  • 5 oz (40g ) flaked almonds
  • ½ small bunch fresh thyme
  • Sea salt
  • ½ bunch fresh, flat-leaf parsley
  • Black pepper, freshly ground
  • Extra virgin olive oil
  • Zest and juice form 1 lemon

Preparation

Preheat oven to 180ºC (350ºF).

Process paprika, garlic, lemon zest and juice, salt, pepper, olive oil, and thyme in a food processor. Trim the outer leaves of cauliflower and discard the stalk so that it can sit flat. Cut an X into the base.

Before placing the cauliflower in a medium casserole pan, rub with the paprika paste. Bake for around an hour, or until the cauliflower becomes tender.

Meanwhile, take another medium frying pan and place it over a medium-low heat. Put the flaked almonds and toast gently until golden, or for about two to three minutes. Then, let them cool.

Once cooled, scrunch them over the cooked cauliflower, and garnish with parsley leaves.  Drizzle with some extra virgin olive oil, and you can combine it with steamed greens and pilaf rice, or as part of a big spread.
