Muffins Based on Pumpkin and Coconut

Here’s what you’ll need for the cupcakes:

  • Two ripe bananas
  • One can of organic pumpkins or one and a half cups of puree made from organic pumpkins
  • One and a half teaspoons of cinnamon
  • Half a cup of coconut sugar
  • ¼ teaspoon of nutmeg
  • ¼ teaspoon of ginger
  • ¼ teaspoon of Himalayan pink salt

  • Two tablespoons of maple syrup
  • One can of organic coconut milk
  • One teaspoon of vanilla beans

Instructions

The process starts in the oven. Just preheat your oven to about 350 F. During this period you should mix all the ingredients for the cupcake and come up with a smooth mixture. The mixture should help you make a dozen of standard-sized cupcakes.

Pour the mixture in muffin tins. After that, bake the muffins for 25 minutes and remove them. Wait for a few minutes until they are cooled. If they are too soft, you don’t have to worry because you can put them in the fridge. When they are hard enough you can use the topping.

In order to make the topping, use a can of organic coconut milk and spread the fatty content I the bowl. Pour the maple syrup and vanilla beans and whip until you get cream. Put the mixture on top of the cupcakes and enjoy!
